Grapefruit Goodness!!!

During the long, cold, snowy, snowy, (did I mention snowy?) winter months, when we are lucky enough to score some FL citrus (THANKS MOM!) nothing is better than this treat. It is like a burst of sunshine!!!

Grapefruit Strudel

1/3 c. flour

4 tsp. sugar

4 Tbsp. melted butter

Mix the ingredients together. Cut grapefruit in half horizontally & use a knife to score grapefruit sections so that they can easily be spooned out when it's time to eat them. Place the strudel on top of grapefruit & broil until brown. (Beware: They burn easily!)

someone must have gotten a little too close to the cats......?? she didn't tell me that they scratched her, but it's pretty obvious.

macy & bella are her adored playmates. every once in awhile they are allowed to come inside & it is so funny to hear her "talk" to them. i'm afraid she is going to be quite a bossy big sister because she sure is practicing on them!

They actually love being outside even in the cold. i am AMAZED at how they play with the snow...aren't cats supposed to "not like" being wet?

C H I N A

Yayyy. We have an update to share.
Last week Scott ended up flying to Taos to ski & (in the middle of potty-training Addalie) we had a blizzard here at home!! Since that wasn't eventful enough....we got a call from our adoption agency! They had a "match" for us!!!! A little girl who is exactly 1 yr. & 1 day younger than Addalie. She has cleft palate. After I got off of the phone with HOLT (our agency) they immediately emailed me this little girls file with all kinds of information & some pictures. We had less than 24 hours to let them know if we were interested-& if we were, they'd send more medical info! So- in between skiing- I was able to contact Scott & we decided to move forward & request the rest of the information from China!! While it isn't 100% decided- we are seriously praying & considering this little girl!!
China is in the middle of their biggest holiday of the year, so things are kinda at a standstill this week. But everything will pick up again soon.

Thank you so much to all of you who have sent us encouraging & supportive emails/phone calls!! We will keep you posted as things unfold.

happy HEART day!

I LOVE valentines day!!!! It is just such a sweet time to celebrate those you love! I enjoy all of the little thoughtful gifts that are given or made & I treasure the special time with Scott celebrating "us". This morning there were a dozen red roses waiting for me along with a pair of earrings that Scott got for me when he was in NM last week.

This afternoon Addalie & I had fun making chocolate covered strawberries for Scott. (tradition!)

& Scott & I are planning on going out tomorrow night...hoping to avoid some of the "valentines day crowd". I am so blessed & thankful for all of the "love" that is in my life!!

We got SO MUCH SNOW! For the first time that I can remember Scott didn't go to market...Crazy! Although for him, missing his 1 of 2 days at market doesn't do well when it's time to pay the bills...but it was fun to have him around for the day. We had a big yummy breakfast & then played outside a little bit. In the evening Scott, Addalie & I headed into the city where Scott & Todd "shoveled out" their apt. buildings. After that we all went to Jennie's for dinner & Alicia & my mom met us there. Scott was supposed to fly out to Taos, NM on Saturday for his yearly ski trip...but his flight got cancelled & then rescheduled & cancelled AGAIN...so it looks like he won't be going. At least not this week. He is pretty bummed out. Guess he'll just have to enjoy the snow here at home!
